Eastern Europe meets Middle East

The Fairmont Dubai has revealed plans to bolster the scope of its international culinary brigade with the arrival of three prominent chefs from Russia next month.

"Considering the limited numbers of restaurants in Dubai offering Russian cuisine, our aim is to showcase a cuisine that has not been prominently featured in the region," said Richard Schestak, regional director of food and beverage, Fairmont Hotels & Resorts, Middle East.

With Schestak at the helms in his newly created role for the hotel group, Taste of Russia has pinpointed the significant percentage of the city's population represented by Russian expatriates, and the need to "feature a cuisine which is still not popular in the city."

Kim Gates, executive chef at Swissotel Krasnye Holmy Moscow will spearhead the talents of her team members. Sous chef Alexey Bykov and chefs de partie Ana Kaloshina and Natalya Alekshina have developed an authentic menu to include Siberian pelmeni, chanterelle ragout and port wine sauce, and marinated red wine onions and scallions.

Taste of Russia will run from August 4 to 31 at the property's restaurant Spectrum On One, currently boasting a culinary team comprised of 11 nationalities, and pre-dinner themed beverages and music will be available at Bridges cocktail lounge.
