Creative crockery

Creating elegant table presentations acts as a vehicle to boost the entire dining experience, and catering professionals in the region are now becoming acutely aware that it is not merely the carte du jour that makes an impact, but also the tableware, which can help accentuate good food.

In order to challenge the typical perceptions of crockery, many of the contemporary ranges of sampling plates, soup plates and platters, are now available with a quirky twist, whether that is the shape or the colour. Also, whether updating the entire look of a catering establishment or accentuating a few of the key dishes, restaurateurs are now mixing and matching colours and styles for an eclectic look.

"There is a move towards individual shapes that make a strong statement on the tabletop," said a spokesperson from Steelite.

"Tableware should enhance the creativity of the chef, and offer the opportunity for an establishment to generate individuality and recognition, and most importantly, bottom line improvement."

The latest collections from companies like Steelite and Schönwald continue to favour durable porcelain pieces, but with designs inspired by everything from exotic shells to steep rims.

Practical considerations that come into play however, include chip warranty, and whether the pieces are dishwasher, freezer and microwave safe. Other key selling points for most dinnerware manufacturers are durability and heat retention.

On the aesthetic side, many companies now offer customisation services for tableware, crafted to reflect the particular character of the brand or target clientele, and with every shape and size available; from deep to flat, oval to quadratic, and soup bowl to sectioned salver, a restaurant can truly create its own identity with the help of its choice in crockery.
