UK food safety tipped for Dubai

Dubai Municipality's food control section is expected to roll out the UK's Safer Food Better Business model to small businesses in a bid to up Hazard Analysis and Critical Control Points (HACCP) compliancy.

Bashir Hassan Yousif, food safety specialist at Dubai Municipality, told Caterer Middle East the system should be ratified by Codex Alimentarius, to be implemented at small and independent food outlets in the city.

"People were forcing HACCP to work on all levels, and that was the wrong attitude. You have to cater to specific needs, and also depending on differing levels of education. I expect it will be approved and also used by other countries in the region," said Bashir Hassan Yousif, food safety specialist, food control section, Dubai Municipality.

Yousif said the Municipality are looking to new solutions for small businesses in response to firm indications that HACCP cannot be uniformly applied in varying grades of food establishments.

"We want to offer HACCP solutions for small businesses, because it has been indicated in recent discussions that it cannot be uniformly applied at all levels of food establishments, Yousif said.

Spearheaded by Professor Eunice Taylor, the UK's Food Standards Agency's system advises businesses on safe working methods, a daily diary for record keeping, and food safety management systems specific to individual businesses.

Fully compliant with HACCP's seven key principles, the "logical and simple" system is currently implemented at 400,000 businesses across the UK.

"We are using our old ways of ensuring compliancy, but with the construction boom in Dubai and the prevalence of 24-hour outlets, inspection alone cannot work," Yousif added.
