After selling over a million falafels in the UAE in 2010, franchise firm Just Falafel says it is aiming to become the biggest restaurant of its type in the world.

The chain has two stores in Abu Dhabi and three in Dubai, with another opening in the first half of 2011.

Just Falafel’s plans to open up to 75 stores in the UAE over the next five years and has implemented a company-wide plan to streamline service, said founder Mohamad Bitar.

The firm says it spent “several million dirhams” in 2010 with some of the fast food industry’s biggest consultants, including franchising leader Francorpto.

Those deals have seen the company transform its offerings from pushcarts and corner cafeterias into a commercial fast food brand.

Just Falafel will also open an 8,000 sq ft kitchen in Dubai Investment Park in the next few months, which will serve as a catering, training and distribution point for the company’s UAE outlets.
