Bice Abu Dhabi passes authenticity test

Favignana tuna seals the deal for a true taste of Italia at Bice Abu Dhabi.

Bice at the Hilton Abu Dhabi has become the first restaurant in the UAE to be certified by the Accademia Italiana della Cucina.

Held earlier this week, Alessandro Tatulli, restaurant manager, and Luciano Gandolfo, Bice chef, presented an authentic Italian meal in front of a select number of VIP guests for the Accademia, which is an official guide to authentic Italian restaurants across the globe.

Hosted by Paolo Dionisi, Italian Ambassador to the UAE, special guest at the dinner was Professor Giuseppe Dell'Osso, president of the Accademia, who came especially for the event from Italy.

"This is my first time here as president of the Accademia, and I am excited by what can happen here. This is a new phase for authentic Italian cuisine in the Middle East, and the Accademia will now enforce and upgrade the quality of our cuisine in the UAE," commented Dell'Osso

A non-profit organisation, the Accademia is recognised by the Italian authorities as an official rank of authenticity, not only for Italian cuisine but for Italian culture as well.

"It is a cultural, elite club that aims to maintain and increase awareness of our lifestyle. Too many people have a wrong impression about what our food is about, so we aim to correct this," added Dell'Osso.

Hailing from Sicily, chef Luciano presented a four-course meal focusing on Favignana tuna, which is captured off the coast of Sicily using ancient fishing methods.
