Chef de Cuisine Steven Liu is pleased to extend the Great Wall of Chinese cuisine in Spectrum on One with Shanghai and Szechuan inspired fare at the Fairmont Dubai.
From April 15 to May 31, the culinary brigade of Spectrum on One will expand its specialised Chinese kitchen to feature an array of delicacies from two prominent areas - Shanghai, the eight most populous city in the world and Szechuan, the agricultural 'province of abundance' located in the western part of the country.
Guests will have the opportunity to experience Chef Liu's modern interpretation of authentic Chinese cuisine with dishes such as crispy chicken and eel soup; stir fried king prawns and jade coloured vegetables; Shi-zi Ton, a simmered meatball with a ginger and spring glaze and deep fried whole hammour Yu-Shig style.
A native of Taiwan, Chef Liu will demonstrate his eclectic use of Asian herbs and spices to create a menu befitting these two culturally rich and time-honoured cuisines from the mainland. Demonstrating over 20 distinct culinary techniques, Szechuan fare is also known for its spicy and exotic ingredients such as peppercorn (fangara) and bean chilli paste, while Shaghainese cuisine is renowned for its abundant use of seafood, including oysters, seaweed and prawns.
